Question about using leftover kimchi and a single pork chop

I was pretty sure my neighbor in Denver was just being nice when she gave me a jar of homemade kimchi last month. I had no clue what to do with it besides eat it plain. But I had a lonely pork chop and some leftover rice, so I gave her 'kimchi fried rice' idea a shot. It turned a boring Tuesday night into a really good meal. Anyone else have a weird fridge item that ended up saving dinner?

That "lonely pork chop" line really got me. It's funny how we do that, turn a single leftover into a whole story. I see it all the time, like when my fridge has just one egg and a half onion and it feels like a puzzle to solve. The kimchi rice move is exactly it, taking that one sad thing and building a whole new meal around it. It's less about saving food and more about not letting the kitchen win, you know?
