Picked up a bag of random produce from the discount bin at Aldi and it completely changed how I plan meals

I was at Aldi last Tuesday and saw they had a $3 bag of mixed veggies that were about to go bad - peppers, zucchini, a weird squash. Normally I'd skip it but I grabbed it on a whim. Ended up roasting everything with some spices I had and it was the best dinner I made all week. Now I'm thinking about doing this on purpose. Has anyone else tried building meals around the clearance produce instead of starting with a recipe?

Hell yeah that's the BEST way to cook. Random produce forces you to get CREATIVE.
