Found a weird half jar of pickled okra from 2021 in the back of my fridge today
I was cleaning out my fridge for real this time and way in the back behind the baking soda was this sad little jar of pickled okra. I think I bought it for a New Years party three years ago. Anyway I googled if it was still safe and apparently pickled stuff lasts forever if the seal was never broken. Mine was open though so I tossed it. But then I had nothing else for dinner except eggs and a sad bell pepper. Threw it all in a skillet with some rice and it actually turned out pretty good. Has anyone here ever cooked with leftover random veg and had it work out better than the meal you planned?

@wright.taylor is right about pickled stuff changing once it's open. I had a similar thing happen with a half-used jar of bread and butter pickles from 2020. I was sure they'd be fine since pickling is supposed to preserve things, but the brine had gone cloudy and there was this weird taste. Tossed them right out. As for leftover random veg, I once found a wrinkled bell pepper and some wilting scallions in the crisper drawer. Sliced them thin, fried them up with some leftover shredded chicken and soy sauce, and it turned into a better stir-fry than anything I could have planned. It's funny how those desperate combos sometimes hit the spot.

Ha, I read somewhere that pickled stuff changes flavor once you open it and it's exposed to air, so you probably made the right call tossing it. Weird how those random fridge scraps can sometimes turn into the best meals though lol.

Man ain't that the truth. Last week I found a half bag of baby carrots that were getting soft and a jar of marinated artichokes that expired in 2020, threw em in a cast iron with some leftover sausage and it was honestly better than what I'd planned for dinner that night.
