Found a jar of kimchi that's been in the back for a year, still good?
I was cleaning out the fridge for a pest job prep and found a jar of kimchi I bought from H Mart in January. The thing is, it's been opened and just sitting there. I figured it was a goner, but I looked it up and read on a fermentation blog that properly made kimchi can actually be safe to eat for a long time, even a year, because the lactic acid bacteria keep it preserved. The blog said the taste just gets stronger and more sour, and you should look for mold, which this jar doesn't have. I'm still a bit nervous, but it smells fine, just really funky. Has anyone else actually eaten kimchi that old, and did you cook with it or just toss it on rice?
