I saw a grocery store in Portland selling pre-made bouquets for $12.99 that looked exactly like my $65 wedding centerpieces.

That Portland grocery store find is pretty wild. I get what terryb11 is saying about peace of mind, but is a wedding really ruined if the flowers aren't perfect? Seems like a lot of money for something that wilts in a week.

Depends on the wedding. Paying for the design, setup, and knowing it's perfect for that day has its own value. Sometimes the extra cost is for peace of mind, not just the flowers.

My friend tried to DIY her wedding flowers to save cash. The stress made her cry the morning of, and her mom had to rush to a grocery store anyway. She says paying someone would have been worth it just to enjoy the day.
