Update: Had to choose between a 3-gallon crock and a 5-gallon bucket for my first sauerkraut batch.

Went with the bucket, and now I have enough kraut to feed a small army for about six months. Anyone have creative uses for 15 pounds of fermented cabbage besides just eating it straight?

That five gallon bucket is actually closer to ten pounds of cabbage, not fifteen. The water weight gets lost during fermentation. You can make a killer Reuben soup with a couple pounds of it, just simmer it with broth and corned beef.

Honestly @rileyl98 has a solid point about the water weight. Read an article last year breaking down the science of it, something about cell structure breaking down during fermentation. Tbh that Reuben soup idea sounds amazing, never thought about using sauerkraut that way. Always just piled it on sandwiches or ate it straight from the jar. Gonna have to try simmering it with some broth like you said. Probably adds a real nice tang to the whole pot without being too harsh.
