Question about my old crock versus a new fermenting lid setup

I used to just use a plate and a rock in a crock for my kraut, which worked fine for years. Then I spent about $35 on a fancy airlock lid system, thinking it would be a game changer. Honestly, it just makes me miss the simple way, and I feel a bit silly for spending the cash. Anyone else go back to their old basic gear after trying something new?

Totally get it. Bought a set of those fancy glass weights once. Felt so smart. Used them twice and now they just take up a drawer. My old pickle jar with a cabbage leaf and a zip-top bag of brine on top works every single time. All that extra gear just gave me more stuff to wash. The simple plate and rock method has been proven for a hundred years.

Read an article once that called it "fermentation theater." Sometimes the old ways just work, and you're paying for peace of mind you don't really need. My grandma's plate and jar method never failed her either.

My sauerkraut bubbled over with just a bowl on top.
