I finally sorted through my old fermentation notes from the nineties.

Back in the day, we just used clean jars and waited for bubbles. Now I see so many fancy kits and strict timers that take the fun out of it. Do you miss when it was more about feel than following rules?

Ugh, right? Now everything's got to be so exact, like we're doing rocket science instead of just stuffing veggies in a jar. My grandma used a clean plate and a prayer, and her kraut was fine, honestly. It's like we've lost the simple touch.

That line about your grandma's clean plate and prayer really hits home. I've found that getting too caught up in gear can mess with the natural process. Sometimes I just go back to basics, use what's clean, and trust my senses. If it smells right and looks active, you're probably on track. All those timers and kits can make you second guess what you already know.
