Dropped $120 on a pH meter that lied to me for 3 weeks
Bought this fancy digital pH meter off Amazon thinking it would make my hot sauce ferments foolproof. Calibrated it, tested it, seemed fine. But my last batch of habanero garlic sauce kept stalling and getting weird smells. Turned out the meter was reading 0.8 points too high the whole time, so I thought my pH was safe when it wasnt. Anybody else had a cheap probe screw up a whole batch?

I bought one that died after two weeks of sitting in vinegar.

Oh man, that's a rough one. I had a buddy who went through almost the exact same thing with a cheap pH meter he got for his kombucha. He was so proud of his setup and then one day he opened his jars and they were all moldy on top because the thing was off by a whole point. He spent like a month trying to figure out why his batches kept failing before he finally tested it against some store bought vinegar and realized it was the meter, not his recipe. I think he ended up just getting those old school liquid test strips instead and never looked back.
