Decided between a glass crock and a ceramic one for my sauerkraut
I was looking at two 5-gallon fermenters last week from a local kitchen supply shop in Austin, and I picked the ceramic crock because it had a built-in water seal. The glass one felt cheaper but easier to see through, and after three days of bubbling, the kraut tastes great but I keep wondering if glass would have been easier to clean. Has anyone else dealt with stubborn mold in a ceramic crock's crevices?

My buddy had mold issues with hers and switched to glass jars from whole foods market.

Oh GOSH yes, I had the same problem. I finally gave up and got a basic glass jar with a simple plastic lid and it has been a lifesaver. No more scrubbing out that gross mold or worrying about it getting into my stuff. I just rinse it out every few days and it stays perfectly clean. It really does make a difference, I wish I had switched sooner!

Wish I'd known scrubbing mold out of a ceramic crock felt like defusing a bomb blindfolded before I bought mine. Now I'm wondering if my kraut has that extra "earthy" flavor or if I just didn't scrub hard enough. Guess I'll join the glass jar club once this batch is gone.
