That time my sourdough turned into a pancake at a farmers market in Austin

I was set up at the Mueller farmers market last Saturday, ready to sell my usual loaves. Around 10 AM, I pulled one out to show a customer and it was completely flat, like a deflated football. My starter had been super active that morning, so I have no idea what happened, maybe the heat or the timing of my folds. I panicked for a second, then told the lady it was a new rustic flatbread style, which was a total lie. She actually bought it, and I spent the rest of the day labeling the ugly ones as 'artisan discs' at half price. I sold maybe 15 of them, but my regulars definitely noticed the difference. Has anyone else had a batch collapse right before a big sale, and did you just eat the loss or try to save it with a different name?

Sounds like you made a quick save and some cash out of it, so honestly, where's the real problem? If people bought the flat ones, maybe just start selling them that way all the time and skip the whole sad baker routine.
