Spent $260 on a used 20qt Hobart mixer on FB Marketplace and it's paying for itself faster than I thought
Three back to back wedding cake orders last month would've taken me two full days by hand but this thing ate through them in one afternoon, so now I'm wondering if I should've held out for the 30qt or if 20 is plenty for a home kitchen doing farmers market volume.

Seems like 20qt is plenty unless you're doing bigger batches.
