Skeptical about sourdough starter discards, now I hoard the stuff

I spent 6 months throwing away my starter discard every weekend, figured it was just waste. Then a neighbor in Portland talked me into making crackers with it, 200 grams of discard, some rosemary and olive oil, and they beat anything from the store. Anyone else find a surprise use for something they used to toss?

Same thing happened to me but with pancakes. I kept dumping the discard until someone mentioned it makes the fluffiest pancakes ever. Now I save every single bit and make a batch every Sunday. Basil and a bit of garlic in the crackers sound amazing, going to try that this week. It honestly feels like finding free money in an old coat pocket. Now I get annoyed when I forget to feed the starter because it means no pancakes.
