Skeptical about sourdough starter discard until I saw my grandmother's trick

My grandmother told me last fall to save my sourdough discard for pancakes, and I thought she was just being frugal. I finally tried it after 3 weeks of tossing it, and those pancakes were the fluffiest I ever made. Has anyone else found a use for discard that surprised you?

Wow, I totally disagree honestly - those discard pancakes always come out dense and gummy for me, not fluffy at all. I've tried it half a dozen times and still don't get the hype.

Oh dang, I actually used to be totally on your side with this. I swore off discard pancakes after a few tries that came out exactly like you said, dense and sad. But then I tried a different recipe that called for letting the batter rest for like 15 minutes before cooking, and it was a total game changer. That little bit of extra time really made them light and airy, totally changed my mind on the whole thing. Still took me forever to figure it out though so I get the frustration.
