Rant: the customer at my Saturday market stall asked if my sourdough was 'the kind without all that bacteria'
I do the Boise farmers market every Saturday and a woman picked up a loaf, squeezed it, and told me she only buys bread that's been 'sterilized proper' because she read sourdough is full of germs. I tried to explain that the starter is just flour and water and wild yeast, and she set the loaf down like it had cooties. How do you all handle folks who are scared of the very thing that makes the bread work?
Just tell her the yeast are unionized and demand fair treatment before they'll rise. Or ask if she also avoids yogurt, cheese, beer, and every other thing on earth that has ever had a microbe near it. The sterilized bread she wants is called a cracker.
