Pulled a cake out of the oven too soon during a birthday bake last Sunday
I was making a layered vanilla cake for my niece's 8th birthday party and got impatient. I pulled it after 22 minutes because the top looked set, but the center was still jiggly. It collapsed about 2 minutes after I set it on the counter. I ended up scraping the whole thing into a bowl and making cake pops instead. The kids actually liked them better, so it wasn't a total loss. Has anyone else salvaged a bad bake with a quick pivot like that?

You said you pulled it "after 22 minutes because the top looked set." That's exactly the problem right there. The top of a cake is always going to look done before the middle is actually cooked through, especially if your oven runs hot or you didn't rotate the pan halfway through. The toothpick test is the only reliable way to tell, never the top. I've seen too many people learn this the hard way.
