Overheard a baker at my local shop in Denver say she rests her cookie dough for 48 hours minimum
Tried it with my last batch of chocolate chip cookies and the flavor was way deeper than my usual 30 minute rest, anyone else notice a big difference with longer dough rests?

48 hour rest is a total game changer for chocolate chip cookies. The dough really lets the flavors from the browning and vanilla blend in deep. My batch after a full two days was way richer and had that toffee-like taste I couldn't get before.

For REAL. I thought people were just exaggerating about the 48 hour thing but I tried it last week and it was INSANE difference. The toffee notes hit way harder and the texture is somehow chewier but not raw in the middle.
