I finally compared my old stand mixer to a used commercial model
I baked with a KitchenAid for 7 years and thought it was fine until I picked up a beat-up Hobart from a closing diner in Burlington for $200. The Hobart kneads dough in half the time without heating up or walking across the counter. Has anyone else made the switch from home to commercial gear and noticed a huge difference?

Wait, you got a Hobart for $200? That's insane. I'm shook honestly. Those things are tanks and usually go for way more even beat up. My buddy has one from the 80s and it still runs like a beast. The fact that it doesn't walk all over the counter is a huge deal too, my KitchenAid used to vibrate itself halfway across the counter. You basically stole that thing.

I mean I get why people lose their minds over Hobarts, they're built like actual tanks and all. But honestly, $200 for a used one isn't exactly stealing when you think about what you're getting into. My cousin got a Hobart and within a year had to replace the speed control board and it cost him almost what a new KitchenAid would have. Yeah they don't walk around on the counter but my KitchenAid has never moved that much and I've had it for like eight years, maybe I'm just lucky or something. Plus Hobarts are heavy as all get out, good luck moving it around if you need to store it in a cabinet. I think people overhype the whole "they last forever" thing too, like yeah they're tough but parts are expensive and hard to find and not every repair shop will even touch them. So $200 is a good deal but it's not like you robbed a bank or anything, you just got a used mixer that might cost you later.
