Butter exploded all over my kitchen during a wedding cake trial
Last Saturday I was testing a new buttercream recipe for a friend's wedding cake and the mixer paddle caught a rogue chunk of cold butter. It shot out of the bowl and splattered melted yellow all over my walls, my hair, and the floor in about two seconds flat. I froze for a second, then grabbed a bench scraper and started scraping the counter while my dog licked the tiles. The worst part was I had already added half the powdered sugar, so the texture got all grainy and I had to toss the whole batch. I ended up redoing it with room temp butter cut into small cubes, which took an extra 20 minutes but saved the day. Now I keep a digital thermometer on the counter to check butter temp before it goes in, no more guessing. Anyone else had a butter mishap that turned into a full kitchen cleanup? How do you keep your butter at the right temp when you're in a hurry?
