Bread flour vs AP flour, a tough customer finally made me switch
I used to swear by all purpose flour for my sandwich loaves, thought bread flour was a waste of money for home baking. Then this guy comes into my Saturday market stall three weeks ago, buys a loaf, and the next week he's back telling me it 'collapses like a wet sponge' when he slices it. I was defensive at first, but he showed me a photo and he was right, the crumb was dense and the top caved in completely. So I went home and ran a side by side test with the same recipe, same water temp, same rise time, and the bread flour loaf held its shape like a dream. Now I use bread flour for anything that needs structure, like baguettes or sandwich bread, and I keep the AP for cakes and cookies. Has anyone else had a customer or friend give feedback that actually forced you to rethink a basic ingredient choice?

Three weeks of hearing about a "wet sponge" loaf from a stranger at a market stall would've sent me into a spiral, honestly. I've had people complain about crust color or a slightly gummy center, but no one ever showed me a photo of the whole thing caving in. That's the kind of visual that sticks with you, and it's wild how one bad review can flip your whole baking world upside down. Bread flour really is a different beast for structure, I felt the same way when I did my own side by side test with baguettes and the AP ones looked like sad deflated balloons.
