Why does nobody talk about how air fryers ruin roasted vegetables

I tried making roasted broccoli in my air fryer last week and it came out dry and kinda burnt on the edges. My friend Sarah from work said I must be doing it wrong but she does hers at 400 for 10 minutes and they taste like cardboard. I followed a recipe from a blog that said toss them in oil first but they still came out sad. Has anyone found a vegetable that actually works good in these things or should I just stick to my regular oven?

Jumping in here to say your friend is wrong and most recipes are lying to you. Broccoli is like the worst veggie to try in an air fryer because those little florets have too much surface area and dry out before the inside cooks. I've had way better luck with denser stuff like brussels sprouts cut in half or cubes of sweet potato where there's enough moisture to not turn into charcoal. Toss them in oil and season like normal but check them at like 8 minutes instead of trusting any blog that says 10-12 minutes because every air fryer runs different. Honestly I still use my regular oven for most roasted veg because you can spread them out better and they don't get that weird dried out crust.

Man, you're not wrong about that dried out crust thing.

Yeah that's basically life though - everyone swears by shortcuts until they don't work.
