Air fryer fish sticks turned into a soggy mess somehow

I followed a recipe for homemade fish sticks in the air fryer to the letter. They came out all wet and fell apart when I tried to pick them up. The breading just slid right off the fish, which was still kinda raw inside. My whole kitchen smelled like fish for the rest of the evening. I had to order pizza because dinner was ruined. What did I do wrong, did I not dry the fish enough? This is so annoying lmao.

People always say to keep the filling lean to avoid grease, but that just makes them dry. Over there, they use a little beef fat in the mix, and it comes out so much better. The air fryer gets the shell perfect, but you need that moisture inside.
