Warning: I almost gave up on air fryer chicken wings because of one mistake
Honestly, I made wings two ways last weekend. I patted them dry and tossed them in cornstarch, like a recipe said. The other batch I just dried and seasoned. The cornstarch batch came out with a weird, tough skin after 20 minutes at 400. The plain batch was perfectly crispy and juicy. The difference was night and day. Has anyone else had a bad experience with using cornstarch on wings in the air fryer?

So the cornstarch is basically turning wings into jerky? Sounds like @loganbaker's friend was onto something with the leather footballs. I tried it once and the skin got this weird, kind of plasticky crunch, like a stale potato chip. It wasn't crispy good, it was crispy sad. I'm with you, just drying them off really well is the only trick that works for me.

Totally agree. Cornstarch is a trap for wings. It just seals in all the moisture and steams them. You end up with that weird rubbery skin. Drying them super well is the only real trick. The air fryer needs that dry surface to get the fat crispy. Never going back to powder again.

My buddy tried the cornstarch trick on his wings last month. Said they turned out like little leather footballs. He just seasons them dry now and they're always perfect.
