My sister told me my chicken wings were soggy and she was right
I used to just toss frozen wings in the air fryer at 400 degrees for 25 minutes and call it done. My sister came over last Saturday and took one bite and said these are kind of limp, you know? I was annoyed but then I tried her method. She said to pat the wings dry with paper towels, then toss them in a little baking powder and salt, and let them sit in the fridge for an hour before cooking. I did that with a batch last night and they came out crispy like actual restaurant wings. The baking powder really makes a difference in the texture. Has anyone else tried this trick or do you have a better way to get that crunch? I feel like I wasted a year of perfect wing potential.

It's funny how a simple tip like that can make you realize you'd been settling for good enough in the kitchen, kind of like how most of us just accept things are fine until someone shows us what better really looks like.

Gotta say @joelp81 you hit on something big that goes way past cooking. That "settling for good enough" mindset creeps into everything, like how we get used to a bad coffee maker or a shirt that doesn't QUITE fit right. What nobody talks about though is how once you SEE what better looks like, you CANT unsee it, and sometimes that's a double edged sword because now you're stuck wanting the upgrade. It's like those kitchen gadgets where the cheap version did the job but the nice one actually CHANGES how you cook, and suddenly you're mad at your old self for wasting time being fine with fine.
