Can we talk about how hard it is to get a consistent pour over on a humid day?

I've been brewing v60s for about 6 months now and kept getting these super slow drawdowns that tasted bitter. Took me way too long to realize it was the humidity where I live in Houston messing with my grind size. My burr grinder was producing more fines on those 90% humidity mornings because the beans were sticky. Anyone else notice their grind changes when the weather shifts?

Hmm actually the humidity thing might not be affecting the grind as much as you think. More likely the high humidity makes the coffee grounds clump together in the filter, leading to channeling and uneven extraction. That bitterness you're tasting is probably from overextraction where the water finds a path through the clumps. Try giving your v60 a little swirl right after you pour to break up those clumps and see if that helps with drawdown times. Also storing your beans in a cool dry place or keeping them in the freezer can help with moisture issues on those sticky Houston mornings.

Olivia's point about clumping makes sense in theory, but I've actually had the opposite experience down here. The humidity seems to make my grind a lot coarser no matter what I do, and the bitterness comes from under-extraction instead.
