Just found out shellac dissolves in alcohol, not water, and I've been stripping stuff wrong for 5 years

Shellac dissolves in alcohol" is right, but you can also strip it with ammonia or denatured alcohol.

3 gallons of denatured alcohol to strip a single table seems like overkill to me. Unless you're refinishing a whole dining set, just use a rag and some elbow grease.

And speaking of overkill, @mary_patel59, that reminds me of the time my uncle tried to strip a single chair with a whole gallon of paint thinner. He ended up with a puddle in his driveway and a chair that still had shellac on it. Some things you just don't need that much of.
