My neighbor in apartment 4B showed me how to make a whole pot of soup for under $5
I was taking out the trash last Tuesday and he was on the stoop with a big pot. He said he makes a 'fridge clean out' soup every Sunday with whatever veggies are about to go bad. He showed me his pot, which had a leftover chicken carcass, two soft carrots, a wrinkly onion, and a handful of old celery. He said, 'Just cover it with water, simmer for a few hours, and you've got lunch for three days.' Has anyone else tried this kind of zero-waste soup? What's your go-to base?

A frozen waffle in soup is a hard pass for me. That texture would be so wrong. A good base is just too important to mess with like that.
