Hot take: My attempt to make homemade seitan from scratch turned into a 4 hour kitchen project
I wanted a cheap meat substitute, so I followed a blog recipe using vital wheat gluten from the bulk bin. What was supposed to take 45 minutes ended up involving a ton of kneading, simmering, and cooling before I could even use it. Is making your own seitan ever actually worth the time versus just buying a block of tofu?

My buddy Dave wasted a whole Sunday on that once.

A whole Sunday? That's rookie numbers. I've lost entire weekends to stuff like that.

Honestly though, losing a whole day to something you enjoy isn't wasted time. Maybe it's just me but I feel like we call too much stuff a waste now. If you're into it and having fun, that's a good use of a Sunday. The whole point of a day off is to do what you want, even if it looks lazy to someone else.
