Found a way to make a full pot of soup for under $5 that actually tastes good

I keep seeing people buy those expensive pre-chopped soup kits, but a whole cabbage, a couple of carrots, and a bag of dried lentils from my local market costs less and makes twice as much. Anyone have other cheap, hearty soup recipes to share?

My mom's potato and leek soup is the best. Just boil them with some broth and blend it smooth.

Actually you gotta sweat the leeks first. Just boiling them with potatoes makes the soup taste kinda flat and oniony. Cook them down in some butter or oil until they're soft and sweet, then add the potatoes and broth. That caramelized flavor is what makes it good. Blending it smooth is right though, that part is perfect.

Remember my roommate tried to make a "cheap" soup once and used an entire bag of dried beans without soaking them first. The pot basically turned into cement, we had to throw it out, and the whole apartment smelled like farts for two days. It was the opposite of saving money lol. I stick to lentils now because they cook fast, but that whole disaster did teach me to read the bag instructions.
