Debate with myself: How long should a simple floor patch actually take?

Ran into a problem last month patching a low spot in a kitchen in Portland. Thought it would be a 2 hour job, ended up taking almost 6 because the self leveler kept finding new dips I didn't see. Some guys say just feather it out and move on, others swear you gotta let it cure fully before moving forward. What's your cutoff for when a patch is taking too long?

Had a similar thing happen at my buddy's place in Seattle last summer. Poured self leveler for what I thought was a small spot and ended up chasing it like it was trying to escape. By the time I was done the whole kitchen floor was an inch higher.

Man, it's funny how one small project can turn into a whole new problem. Seems like that's how life works too, you try to fix one little thing and it just keeps growing until you're in way deeper than you planned. Makes you wonder if chasing small issues is worth it when they always try to pull you into something bigger.
