Thought I'd try making my grandma's sourdough starter from scratch. It exploded in my kitchen last Tuesday.
I followed her recipe to the letter, fed it every 12 hours, and I guess I left the jar too tight? Woke up to glass shards and sticky dough on my ceiling at 6am. Dog was licking it off the floor. Learned you gotta burp that jar like it's a baby. Anyone else have a starter go rogue?

@amybarnes that rye tip is interesting, I might have to try that if mine ever gets wild again. So what finally worked for me was actually switching to a bigger jar, like way bigger than I thought I needed. I was using a pint sized mason jar and that thing was just too small for the amount of starter I had going. Once I moved it to a quart sized jar with just a coffee filter and rubber band on top, it stopped trying to escape. Did you adjust your feeding schedule at all after the big mess or just keep going with the same routine?

Did you try feeding it with a different kind of flour? I switched to half rye half white once and it calmed right down, stopped being so angry and exploding everywhere.
