My mother-in-law told me I was burning my garlic every time I cooked, so now I add it last instead of first.
She watched me toss minced garlic in hot oil and just shook her head, and after tasting the difference when I followed her way, I can't believe I spent years ruining the base of half my dishes without noticing.

The same thing happened to me with salt. I used to throw it in early because that's what felt right, but my buddy who actually cooks for a living told me to hold off until the end and it changed everything. It's funny how the order you do things can completely reshape the outcome, whether it's cooking or pretty much anything else you're learning.

Oh totally, @ellis.robert, I had the same thing with garlic - adding it later changed everything for me.
