My grandma's 'secret' for fluffy pancakes was just letting the batter sit

She always told me to mix the batter and then wait 15 minutes before cooking. I thought it was just an old habit with no real point. But after making a rushed batch that turned out flat and tough, I tried her way again. The difference was huge, they were so much lighter. Does anyone else have a simple family cooking step that actually makes a big difference?

Yeah I used to rush it but waiting makes a huge difference lol

Blame the moisture content. A lot of the pre-ground stuff they sell in bags has extra moisture from the roasting process, but the oils haven't settled yet. If you brew it right away, the water pulls out a bunch of bitter compounds instead of the good stuff. I've tested this with the same batch of beans, grinding one half on day one and the other half on day three. The three day wait gave a smoother cup with zero astringency.
