Used to toss all my vegetable scraps in the trash, now I keep a bag in the freezer for broth

I always thought making your own broth was too much work and just threw carrot tops and onion skins in the garbage. Last month my cousin showed me how she fills a zip bag with scraps over a week and boils it all on Sunday for free stock. Has anyone else tried this and found a favorite combo of veggies that works best?

Tried it once and ended up with a muddy tasting broth that made my rice taste weird. I stick to buying the boxed stuff now since it never clashes with what I'm cooking. For me a freezer bag full of random scraps just turns into a gamble, not free stock.

Try roasting your scraps first next time. Just throw them on a sheet pan at 400 degrees for like 20 minutes until they get some color on them, especially the onion skins and carrot tops. That really cuts down on the muddy taste (it's probably from too many starchy veggie scraps like potato peels and squash guts). I also keep it simple with just onion, carrot, celery, and maybe some garlic or mushroom stems. If you toss random random stuff like broccoli stems or bell pepper ends it'll definitely clash with rice dishes. The boxed stuff is fine too, don't let anyone make you feel bad about that shortcut.
