I built my bench with plywood instead of MDF and honestly I think the plywood guys are overthinking it for a hobby setup.

After my MDF top got all swollen from a water spill last spring I replaced it with 3/4 inch birch plywood for $42 and its still flat without any of that sagging everyone warns about, has anyone else found plywood holds up just fine for light woodworking?
