Can we talk about how I stopped using expensive bench top materials?

I used to swear by those fancy butcher block tops for my workbench, dropping over $200 each time. After my last one warped from glue spills in my garage in Phoenix, I tried a sheet of 3/4 inch plywood with a coat of cheap polyurethane. It cost me $45 and has held up better through two years of abuse than the butcher block ever did. Has anyone else had luck cutting costs on bench surfaces without losing durability?

Did you seal the edges of the plywood before coating it, or just hit the top surface? I've heard open edges can soak up moisture and cause delamination down the road. Asking because I'm in a humid area and wondering if that trick would work here too.
