That $45 sourdough class I laughed at is now my whole weekend
My neighbor kept pushing this tiny bakery class in Portland, and I figured I'd just end up with a sad loaf and a lighter wallet. I mean, I'd ruined two starters before, so I wasn't exactly confident. But the instructor had this weird trick of weighing every ingredient in grams instead of cups, and honestly that one change clicked for me. Three weeks later I'm selling 12 loaves a week to folks in my condo building for $8 each, and people are actually asking to preorder. The funny part is I almost didn't go because the class was on a Tuesday night and I wanted to watch my show. Has anyone else found that paying for a local workshop unlocked something you kept failing at on your own?

12 loaves a week at $8 each? thats 96 bucks for something you almost skipped for a tv show. i cant even get my sourdough to rise past a sad pancake and youre out here running a whole bakery out of your condo.

Honestly, the gram thing is the exact reason my first starter finally took off, @ellis.robert. I was the same way, my loaves were flat discs until I stopped guessing with cups and just trusted the scale. Also, don't toss that sad pancake starter, you can fix it by feeding it twice a day for a few days and using warmer water. Once it doubles in size within 6 hours, you're basically there. It took me like four tries before it clicked, so don't beat yourself up over it.
