My neighbor's $9 loaf pan made me rethink my whole baking setup

Last Tuesday I watched my neighbor pull a perfect sourdough out of this beat up aluminum pan she got at a thrift store in Salem. Meanwhile I've got a $60 ceramic set that's been giving me burnt bottoms for months. She said it's about heat transfer, not the fancy coating, and honestly it hit different coming from someone who sells 40 loaves a week from her kitchen. I grabbed the same cheap pan off Amazon the next day and my first batch came out with a crust I couldn't get before. Anybody else downgraded their gear after seeing what the pros actually use? Has anyone else dealt with the mindset that expensive equals better for cottage baking?

Wait, is your neighbor seriously pulling bakery quality bread from a thrift store pan? Yeah, that got me too. I used to think my cast iron and stoneware were the whole deal, spent way too much on a Dutch oven that always scorched the bottom. Swapped it out for a basic aluminum loaf pan after seeing a similar post, and suddenly my crusts were actually crispy, not burnt. It's wild how much we buy into the price tag when the real trick is just letting the metal do its job. I feel kinda dumb for fighting my equipment for so long, but now I'm just glad I finally listened.
