Went with a used 36 inch griddle over a new 24 inch and my brunch service has never been smoother
Two months ago I had $2,400 to spend on a flat top for my 900 sq ft spot in Portland and it came down to a new 24 inch electric or a used 36 inch gas griddle from a restaurant auction. I picked the used gas one even though the guy at the supply house acted like I was nuts. The 36 inch lets me run eggs, pancakes, and home fries all at once without playing Tetris with my spatula. It holds temp way better at 350 and I can push 60 covers an hour on Saturday brunch now. The catch is it eats about $40 more in gas per week and the pilot light is a pain to relight. Would I make the same call again? Yes, but I want to hear from anyone who runs a smaller griddle and still keeps up on a rush.
Used to roll my eyes at guys buying the big used stuff, figured new and smaller was smarter. Then I watched a buddy crank out a full brunch rush on a 36 inch gas he got at auction and he barely moved his feet. My little 24 inch electric would have me juggling pans and losing heat every time I dropped a new batch of eggs on. Watching him park pancakes on one side, bacon in the middle, and hash browns on the other end sold me. Now I get why the supply house guy gave you that look, he just wanted the easy sale. You made the right call.
