Watched my new line cook change the walk-in setup in one weekend
I've been running this kitchen for about 5 years and the walk-in was always a mess of random bins and stacks. Last Friday, my new guy came in early and spent 4 hours labeling everything, grouping proteins by shelf, and putting a FIFO system on dairy. I walked in Saturday morning and actually found what I needed in 10 seconds flat. Has anyone else had a rookie walk in and completely overhaul something you figured was fine?

Same thing happened to me last year. It felt almost disrespectful how much better the walk-in worked after he touched it. You just have to hope that instinct to organize sticks around longer than most of the new hires do.

Fair warning, that new guy energy fades fast once he realizes why the old system happened in the first place. Give it a month and you'll be back to shoving cases of onions on top of the fish.
