TIL from a line cook at a diner in Cincinnati that wiping down your station with salt water stops those mystery smells
He said it breaks down grease in a way regular degreaser doesn't and since I tried it on my truck's cooler shelves, the whole back end doesn't stink like old onions anymore - has anyone else tested this in their kitchen?

Wait are people really that worried about mystery smells in their kitchen? Salt water might work but wiping down a cooler shelf is a lot different than scrubbing a greasy flat top every night.

Jumping off what graceprice said, I think people are way too hung up on "mystery smells" when half the time it's just old food stuck in a crack somewhere. Salt water probably helps with that greasy film on cooler shelves since it cuts through the light layer of grime without being harsh, but for a flat top you'd be standing there scrubbing all night. I mean, maybe it's worth a shot on your stovetop grates if they're not caked on, but for heavy duty grease you still gotta bust out the heavy stuff.
