Talked to a dishwasher who ran a pop-up on the side and it made me rethink how I handle prep waste
He told me he saves every veggie scrap from his shift and turns it into stock for his weekend dinners, which got me wondering how many pounds of usable stuff I'm just tossing in the trash each week, anyone else ever look at their compost bin different after talking to somebody outside your kitchen?

That "bag of scraps in the freezer pays off every Sunday" line hit me hard. It's crazy how such a small habit can make a real difference, makes me feel kinda dumb for not doing it sooner.

Read a piece in some food waste newsletter that said up to 30% of what pro kitchens toss is still good for stocks or pickling. That dishwasher's onto something real, man. Makes you wonder how many pounds of carrot peels and onion skins get thrown out when they could be doing work. I started saving my broccoli stalks and lemon ends since hearing that, it adds up fast.
