Swapped out my old sheet pan rotation system and it saved me 15 minutes during dinner rush

I used to just stack clean sheet pans in a pile on the rack, grab whichever was on top. Every single night I would dig through a stack of different sizes, burn my fingers on hot ones, or grab a dirty one by accident. Last month I finally switched to a vertical slot system I built from some aluminum angle brackets. Now I sort by size and keep an extra row for hot pans coming out of the oven. I even labeled each slot with a sharpie so new dishwashers know where things go. It cut my fumbling time way down and I can grab a specific pan in about 2 seconds flat. Has anyone else rigged up a storage system for sheet pans or hotel pans that actually works long term?

Oh man, this is genius. I did something similar like a year ago when I got sick of my sheet pans always sliding around and getting scratched. I just used those cheap wire shelf dividers from the hardware store and wedged them into my cabinet. Now I have a slot for half sheets, a slot for quarter sheets, and a little spot for my cooling racks. It is seriously such a game changer, I never have to play the "will this pan fit in the stack" game anymore. Did you find that it helped with your bake times too because the pans arent warped from being stacked on each other wrong?

Wait, hold on. You're telling me the way they were stacked was actually warping your pans? I figured that was just an old wives' tale or something. I've got a few old half sheets that are bowed in the middle, always wondered how that happened. Never connected it to the way I was just piling them all on top of each other.
