Shoutout to the guy who showed me why gas ranges beat electric in a pro kitchen

I was struggling with a slow heat-up on a flat top during brunch service last Saturday, and the old head line cook next to me just shook his head. He pointed at his gas range and said 'twist and go, none of that waiting game.' I tried his setup for one order of scrambled eggs and the difference was night and day. Gas gave me instant control and no lag. Has anyone else made the swap and felt like they were cooking blind before?

Nah, gas just means more ambient heat in a cramped kitchen (hello sweat factor) and less even cooking for eggs.
