Serious question, did the health inspector at my old spot in Mesa catch the one thing I thought I was safe on
I ran a small taco counter on Main St for about 18 months and got lazy about dating the diced tomatoes in the walk in. Inspector came through on a random Tuesday, poked a container, and asked me what day it was prepped, and I had no honest answer. He gave me a 3 day recheck instead of a writeup, which felt generous, and I spent that whole night redoing every label in the kitchen. Now I want to know, does anyone else keep a cheat sheet taped inside the walk in door for prep dates, or is that just asking for trouble if they see it?
