Saw a trick with sheet pan liners at a diner in Philly
I was helping a friend prep for a catered event last Saturday at this old diner near Reading Terminal. The head cook showed me how they reuse silicone mats by wiping them down with a vinegar mix instead of scrubbing like crazy. Said it saves them about 20 minutes per batch of roasted veggies. I tried it on my own pans back at the commissary and it really cut down on stuck-on gunk. Has anyone else found a weird cleaning shortcut that actually works better than the standard method?

Oh man, that vinegar trick is gold! I do the same thing with my baking sheets at home and it beats scrubbing for twenty minutes

@bettywilson I gotta say, I'm not sure it's that serious. I mean, twenty minutes of scrubbing? If it's that bad, maybe just get a new baking sheet for like ten bucks at the store. I've done the vinegar thing and it works okay but half the time I still have to hit it with some elbow grease anyway. Seems like folks make a bigger deal out of it than it really is.
