Pro tip: Wipe down your hood filters with degreaser between pro cleanings

I run a small diner in Buffalo and started giving the hood filters a spray with heavy duty degreaser every Sunday night after we close. The exhaust fan started pulling way better and our fire inspector even noticed the difference last month. Anyone else do maintenance between the scheduled hood cleanings or am I overthinking it?

12 years in the game and you've never had an inspector say squat about filters? That's actually kind of surprising to me but not really. I've got a buddy in Rochester who runs a pizza joint and he got dinged for grease buildup on the baffles last year. Cost him a re-inspection fee. But honestly I think most of this stuff is just common sense. If the fan sounds quieter and pulls better after you spray them down, you're probably doing more than the bare minimum. The guys who skip it for months on end are the ones who have problems.

Wait, your fire inspector actually noticed? That's wild to me. I've been running my place for 12 years and those guys just look at the sticker on the hood and check the extinguisher tag. Never had one mention the filters. But you're right about the exhaust pull - I started spraying mine with Simple Green every other week and the fan actually sounds quieter now. Might have to step it up to every Sunday like you.
