Overheard a line cook say 'clean as you go' is just for TV kitchens

I was grabbing a late bite at the diner on 5th and heard the guy at the grill tell the new kid that. He said in a real rush you just pile it up and deal with it after the push. I get being slammed, but that's how you get a slip hazard and a health code write-up. How do you guys handle keeping a station clean when you're getting crushed?

Yeah, that "fire you on the spot" thing from grantt11 reminds me of this dishwasher we had who would just spray everything into the floor drain. The whole place smelled like a swamp by closing.

That line cook is setting that kid up for failure. My first chef would fire you on the spot for letting a station get buried. A clean workspace is the only way to keep your head above water during a rush.
