Just realized our dish pit layout was costing us time after a health inspector's note
He pointed out our main spray nozzle was aimed wrong, forcing staff to twist their bodies to rinse. We moved it 18 inches to the left and cut rack washing time by about 15 seconds per load. Anyone else had a simple fix from an inspection that made a big difference?

Honestly that sounds more like a basic workflow problem the manager should've caught, not some genius inspector tip lol.

Spray the door hinges every month. Wipe down the seals with a damp cloth so they don't dry out. Check the door closer works right, too. A sticky door makes people drop stuff trying to get in. It's a simple fix that stops a bigger mess.

Our old walk-in cooler had a door that stuck so bad you had to shoulder-check it like a hockey player. The inspector just said "that's a trip hazard" and failed us. A $10 can of silicone spray later, and we're not treating every salad prep like a minor league tryout.
