Just realized a simple baking soda paste saved my stainless steel prep table after a citric acid spill last Tuesday.

The acid from a leaking container of powdered citrus cleaner left a dull, etched spot on my station at The Millhouse Cafe, but a thick paste of baking soda and water, left on for about 20 minutes and gently scrubbed, polished it right out.

That trick with the baking soda paste is a lifesaver. My buddy had the same thing happen with a big lemon juice spill on his kitchen counter. He made a paste, let it sit for half an hour, and it took the stain right out without any scratching.

Actually had that backfire on me once. Left the paste on too long and it dried out, ended up leaving a dull spot. Now I just wipe spills right away with a damp cloth.
